TASTE: Something Special #73 – Provencal food

Every Monday on Global Comment, we share Something Special you don’t want to miss. To fit with the six core pillars of the magazine, these will alternate between the themes of watch / listen / read / see / taste / place.

It will be something different every week, but it will always be about something worth seeing, hearing or watching, or a place worth visiting or a food worth tasting.

This week, a way to get the delicious flavours and aromas from Provence into your very own kitchen. Provence, in the south of France, it’s not only a place of stunning beauty, it also has incredible food. Chef Marcus Wareing told the BBC how to recreate it, wherever you are in the world.

Moving onto lavender, Wareing explains “It’s the floral herb I personally adore. It’s got a distinctive flavour and is incredibly versatile. You can use it in both ice cream or in a marinade or just sprinkling it in your salad. It brings so much more to the table more than conventional floral herbs, such as rosemary or thyme.”
